Seasonal Fruit Sparkling Soda
Hereās a simple and easy way to turn a basic fruit juice into a special, festive refreshment, with a recipe that can be used any time of year to take advantage of different fruits and juices in season. I particularly recommend serving it at partiesāa tall glass of the bubbly, fruity tonic is a great way to greet your guests.
If you like, make a double or even triple batch of the honey syrup, which makes successive batches of the soda even easier to whip up.
MAKES ABOUT 2 QUARTS/1.9 L
1 cup/240 mL raw honey (see note)
3 cups/710 mL sparkling water
2 cups/475 mL organic no-sugar-added seasonal fruit juice
(see Seasonal Fruit Ideas, next page), ideally freshly juiced
Ice
Seasonal fresh fruit, for garnish (see Seasonal Fruit Ideas)
In a medium saucepan over high heat, combine 2 cups/475 mL of filtered tap water and the honey, stirring to dissolve the honey. Bring to a boil, remove from the heat, and set aside to cool to room temperature.
In a 2-quart/2 L pitcher, combine the sparkling water, fruit juice, and honey syrup to taste. Serve over ice, garnished with fresh fruit.
SEASONAL FRUIT IDEAS
Spring
ā¢ Use tangerine juice; garnish with tangerine segments.
ā¢ Use equal parts orange and strawberry juice; garnish with whole strawberries.
ā¢ Use equal parts apple and kiwi juice; garnish with kiwi slices.
Summer
ā¢ Use equal parts raspberry and blueberry juice; garnish with whole
raspberries and blueberries.
ā¢ Use nectarine juice; garnish with whole cherries.
ā¢ Use equal parts apricot and plum juice; garnish with apricot and plum slices.
ā¢ Use honeydew juice; garnish with cantaloupe balls.
ā¢ Use watermelon juice; garnish with lime slices.
Fall
ā¢ Use pear juice, garnish with diced pear.
ā¢ Use apple juice; garnish with apple slices and orange segments.
ā¢ Use equal parts apple and grape juice; garnish with red and green grapes.
Winter
ā¢ Use blood orange juice; garnish with blood orange segments.
ā¢ Use Meyer lemon juice; garnish with Meyer lemon and lime slices.
ā¢ Use equal parts apple and pomegranate juice; garnish with apple slices and
pomegranate arils.
OTHER WAYS TO VARY YOUR SODA
ā¢ Use still water instead of sparkling.
ā¢ Infuse the honey syrup with other flavorsāfor example, heat a few cinnamon sticks, herb sprigs, ginger slices, some citrus zest, or some dried lavender in the saucepan with the water and honey (strain the solids out after the syrup has cooled).
